Preparation

    To make the filling

    1. Put the 2 slices of bread in a dish of water to soak
    2. dice the onions and mince the garlic
    3. Fry the onions in the oil until soft (approx 10 mins)
    4. Add garlic and mince and break the mince up well
    5. Add the curry paste, chutney, herbs, spices, sultanas
    6. Season with salt and pepper to taste
    7. Stir in well, reduce temperature and simmer for approx 10 mins
    8. Drain the water from the bread, and beat the mushy bread into the mixture
    9. Add the bay leaves to the mixture
    10. Pour the mixture into a large roasting dish, at least 5cm deep, press down and smooth out carefully

    To make the topping

    1. Beat the 2 eggs, and mix with the milk and season with salt and pepper
    2. Pour the egg-milk mix carefully over the top of the mince layer, it should just cover the surface
    3. Bake for approx 40 minutes at 170°C until the surface is beginning to brown
