Preparation

  1. Cut the meat into 3cm cubes and season with a pinch of salt and pepper
  2. chop the onion into 3cm pieces
  3. crush the garlic and finely dice the chillis and ginger
  4. Blend the tomatoes so there is only a little texture left
  5. Toast the whole spices in a large pan and then transfer to a spice grinder and grind to powder
  6. In the same pan heat the olive oil and fry the onions until softened
  7. Add the garlic, chillis and ginger and the spice mix and stir well together
  8. Add the meat and stir until the meat is well coated and browned
  9. Add the salt and tomatoes and simmer without a lid for 1 hour 15 minutes
  10. Add the coconut milk and cook for another 15-20 minutes until the sauce has thickened

  • 1tbsp olive oil
  • 3 onions
  • 3 cloves garlic
  • 1 chilli pepper
  • 1 thumb fresh ginger
  • 1tbsp turmeric
  • 1.5tsp cumin seeds
  • 1.5tbsp coriander seeds
  • 1tsp cayenne pepper
  • 1tsp salt
  • 1 tin tomatoes
  • 2-3 tomatoes
  • 1 tin coconut milk

Notes

If possible garnish with crushed cashew nuts and fresh coriander
