I love curry and this South African recipe is perfect as my better half likes it too

Preparation

  1. Finaly dice the onion
  2. Fry the onion, star anise, cinnamon, cardamom, fennel and cumin in the 120ml oil
  3. Finely chop the tomatoes
  4. chop the potatoes and chicken into 3cm cubes
  5. crush the garlic and finely chop the ginger
  6. Add all of the remaining ingredients except the bread and simmer for around 45 minutes
  7. Cut the loaves of bread in half and dig out the soft bread from the inside
  8. Ladle the curry into the hollow loaves and serve with the scooped out fresh bread on the side for dipping
