Preparation

  1. Cut the chicken, onion and peppers into thin strips up to 10cm long
  2. Grind the whole spices
  3. Mix all the the seasoning in a dish
  4. Heat the oil in a pan and then fry the chicken
  5. Once the chicken is white nearly white all over add the peppers
  6. After 2-3 minutes add the onions and the seasoning
  7. Heat the tortillas in a microwave for 2 minutes
  8. Serve with salsa, guacamole and grated cheese

  • 500g skinless boneless chicken
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 large onion
  • 1tbsp oil
  • 8 flour tortillas
  • For the fajita spice
  • 2 tsp cornstarch
  • 1 tsp salt
  • 1 tsp caster sugar
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp dried oregano
  • 1 tsp ground black pepper
  • 2 tsp paprika
  • 1 tsp cayenne pepper
  • 1 tsp dried onion powder
  • 1 tsp dried garlic powder
