Preparation

  1. Cook the split peas and whole (peeled) garlic in the cold water, white wine and salt. This will take at least 30 minutes and could take up to 1 hour. The peas should swell up and go soft but you don't want to go as far as pea-soup
  2. When the peas are done, strain off any excess liquid with a cheesecloth lined sieve
  3. Blend the peas (and garlic) in a food processor
  4. Add the lemon juice, white wine vinegar, ½ the red onion and then drizzle in the olive oil
  5. Stop blending when the mixture has the consistency of well mashed potatoes
  6. Place on a serving dish, drizzle with olive oil and lemon juice and garnish with thin slices from the remaining half of the onion
