My wife first had these in a mountain taverna on Crete and after multiple attempts I finally managed to reproduce the recipe

Preparation

  1. Heat oven to around 200°C
  2. Peel and chop the potatoes
  3. Mix the other ingredients in a bowl
  4. Put the potatoes into the roasting pan
  5. Pour over the mixture. Top up with water until the potatoes are close to being submerged (no more than 1cm above liquid level)
  6. Seal with foil and roast for 2 ½ to 3 ½ hours
  7. Serve with your meat of choice

Ingredients

  • 2kg potatoes
  • 150ml olive oil
  • 1litre water
  • 150ml fresh lemon juice
  • 2 vegetable stock cubes
  • 1 tbsp dried oregano
  • 1 tbsp dried rosemary
  • 1 tbsp dried thyme
  • 5 cloves minced garlic
  • Pinch salt
  • Pinch ground black pepper

  • Juicer or sieve
  • Measuring jug
  • Garlic mincer

Notes

It is common to put large piece of meat (e.g. chops) on top of the potatoes to cook with them, but you may need to adjust the cooking time, and if you are serving food for non-meat-eaters then cook the meat separately.
