An approximate clone of the Nando's spicy chicken classic
Preparation
- Combine the sauce (excluding the stock) and marinade the chicken over night
- Put the chicken into a pressure cooker, add the stock (and any extra water needed for the minimum required in the pressure cooker)
- Pressure cook for 9 minutes on high
- Once depressurised separate the chicken pieces from the leftover liquid
- Reduce the liquid (10-15 mins)
- Grill or griddle the chicken for 4-5 mins per side
- Move the chicken to a serving dish and pour the reduces sauce over the chicken

- Sauce
- Juice of 1 limón
- 60ml orange juice
- 60ml oil
- 4tbsp garlic-ginger paste
- 1tbsp sambal oelek
- 2tbsp smoked paprika
- 1tbsp dried oregano
- 1tbsp honey
- 1tbsp onion flakes
- ½ tsp black pepper
- ½ tsp salt
