I combined the Italian classics al'Arrabiata and al'Amatriciana by having both bacon and chilli in one dish.

Preparation

  1. If using bacon cut off and dispose of any fat.
  2. Cut meat into 1.5cm square pieces.
  3. dice the onions, pepper, garlic and chilli
  4. Heat some water in a medium pan
  5. In a frying pan fry the onion, pepper, chilli and garlic in the olive oil on high heat until the onion starts to brown.
  6. Put the penne in the medium pan of water
  7. Add the bacon and lightly fry for 6-7 mins.
  8. Blend the tomatoes in a food processor with the purée and ketchup
  9. Add the blended tomato mix, rosemary, wine, salt and black pepper and simmer for 3-5 mins.
  10. Drain the water from the penne whilst it is still slightly al dente
  11. Stir in the fresh basil and parsley and serve over the penne

  • 1 tbsp ketchup
  • 1 tbsp tomato purée
  • Pinch salt
  • Pinch ground black pepper
  • 4 cloves garlic
  • 1 medium chilli
  • Handful fresh basil
  • Handful fresh parsley
  • 3 sprigs rosemary
  • 250ml red wine
  • 500g Penne
