Preparation

  1. Heat the oil and fry the sausages until browned on the outside, then set aside on kitchen towel
  2. chop the bell peppers into strips and the strips in half, to produce pieces approx 2cm by 5cm
  3. Slice the onions
  4. chop the fresh tomatoes
  5. Fry the sliced onions then add the garlic chillis, tomato purée, salt and pepper
  6. Sauté for a minute, then add the red wine and use it to deglaze anything stuck in the pan
  7. Add the oregano, bay leaves, paprika and all of the tomatoes (tinned and fresh) and leave to simmer for 30-40 mins
  8. Slice the sausages diagonally to around 1cm thick
  9. Add the sausages back and cook for a further 10-15 minutes before serving

  • 1 tin chopped tomatoes
  • 500g tomatoes
  • 2 red onions
  • 2tsp dried oregano
  • 4 cloves garlic, crushed
  • 2tbsp tomato purée
  • Large glass red wine
  • 3 bay leaves
  • 2tsp paprika
  • Pinch salt
  • Pinch black pepper
