Preparation
- Heat the oil in a large pan
- Fry the curry paste for approx 2 mins - avoid burning it
- Add the cocnut milk and lime leaves
- Once boiling add the chicken and simmer for 10-12 mins
- Check the chicken is done with a meat thermometer - it needs to be
80°C - Stir in the fish sauce and sugar
- Turn off heat
- Stir in the basil

- The quantity of curry paste is approximate - if you made it yourself simply use the right proportion (1/3 of the total based on the numbers I've used)
