I love both Italian classics all'Arrabbiata and all'Amatriciana - so why not add a bit of spice to all’Amatriciana to make it somewhere in between?
Preparation
- Cut meat into thick strips
- Finely dice the onion
- dice the chilli
- Heat some water in a medium pan and salt it well
- Put the pasta in the water
- Sauté onion for around 10 mins
- Add the meat and lightly fry for 3-4 mins until crispy
- Blend the tomatoes in a food processor
- Add wine and reduce for 1-2 mins
- Add the tomatoes and chilli to the pan and cook for around 10 mins
- Drain the water from the penne whilst it is still slightly al dente
- Add the drained pasta into the sauce and stir to coat
- Serve with a sprinkling of basil or parsley and a little black pepper
