Preparation
- Mince the chicken or chop up as small as possible
- Blend the garlic, chillies and onions into a coarse paste
- Thinly slice the makrut lime leaves
- Heat the oil, add the paste and lime leaves and fry for around 30 secondi
- Add the minced chicken and fry 2-3 mins
- Add fish sauce, soy sauce, lime juice, sugar, and hot water and cook for another minute
- Turn off the heat, add the basil leaves, and stir a couple of times
Notes
- The Thai holy basil is a key ingredient - other varieties of basil wont produce the same flavour. If you can't get Thai holy basil then use Thai sweet basil as the closest substitute. Other meats (per esempio. beef, pork or prawns) can be substituted for the chicken.
