Spiced chicken, onion, & pepper wrapped in a flour tortilla with salsa

Preparation

  1. Cut the chicken, onion and peppers into thin strips up to 10cm long
  2. Coat the chicken with the dried spices and then squeeze over the lime
  3. You can cook immediately but if posible marinate for 15-60 mins
  4. Heat the oil in a pan and then fry the chicken - 2-3 mins per side
  5. Once the chicken is white nearly white all over add the peppers
  6. After 2-3 minutes add the onions
  7. Heat the tortillas in a microwave for 2 minutes
  8. Serve with salsa, guacamole, sour cream, and/or grated cheese

Notes

  • Can also be made with beef or prawns or a combination of all 3
  • For a gluten-free or lower calorie version omit the tortillas or wrap in lettuce leaves
  • Also often served with guacamole and or sourcream
  • Store-bought tortillas are often high in salt so if possible I recommend making your own
