I developed this recipe several years ago whilst trying to produce a rich cake that was a bit healthier than most

Preparation

  1. Juice and zest the oranges
  2. Sift all the dry ingredients into a bowl and gently stir together
  3. Use a spoon to push 3 even spaced depressions in the dry mix
  4. Add the oil to 1 depression, the orange juice into another and the essences & triple sec into the third
  5. Add the eggs and orange zest on top of the mix
  6. Blend the mix in a food processor on low-medium speed
  7. Pour the mix into a medium cake tin (pre-greased)
  8. Sprinkle the chocolate drops on top and stir into the top half of the cake with a spoon (they’ll sink while cooking)
  9. Cook for 30-40 mins at 200°C
  10. To check the cake is cooked push a knife into the top and withdraw – the knife should come out clean
