Preparation
- chop all the vegetables into medium sized pieces and place into the bottom of a large pan
- chop the herbs
- Place the chicken pieces on top of the vegetables
- Sprinkle on the ground pepper, salt, and chopped herbs
- Top up with water to just cover the chicken
- Simmer on a low heat for 2-3 hours until the chicken is ready to fall apart. Top up with water as necessary
- Remove the chicken pieces with a spoon and leave to cool for a few minutes
- Remove and discard the skin and bone from the chicken, and use a pair of forks to pull the chicken apart into pieces
- Return the chicken pieces to the pan
- Add in a stock cube if you want an even richer flavour.
Notes
- Once you're happy with the basic recipe, try adding a variety of extras, e.g. rice, pasta, bell peppers, or mushrooms
