Aubergine fritters

Preparation

  1. Pierce the aubergine in several places and bake in an oven at 180°C for around 1 hour
  2. Leave to cool for 15-20 mins
  3. Peel
  4. dice finely, into ½cm cubes
  5. Place in a large bowl with the flour and baking powder and mix together
  6. Add the remaining ingredients and mix well
  7. Heat the oil (around ½cm deep) in a large pan until fully hot
  8. Make golf-ball sized balls of mix in your hand and drop carefully into the hot oil
  9. Fry for around 1 minute and then turn over and fry for a further minute
  10. Remove and place onto paper towel to drain free of oil
  11. Cook the remaining mix
  12. Serve
