Preparation
- Mix all the marinade ingredients
- Combine the pork and the marinade in a bowl, cover the pork well, and refrigerate for an hour up to 24 hours
- For the glaze heat the oil in a small pan and add the garlic-ginger paste and cook for around 90 seconds
- Add the other glaze ingredients and turn the heat to very low
- Simmer for at least 10 minutes
- Heat a griddle pan or frying pan
- Add a little oil and then briefly fry the chops to brown them
- Tip the remaining marinade into the glaze and make sure it comes to a gentle boil, then turn off the heat
- Flip them and place into a pre-heated oven to cook through
- They are cooked when they reach 63C, although you can remove them at
57°C as they should continue to cook after being removed if they are allowed to rest briefly - Coat the pork with the glaze and serve
