Preparation

  1. Finely dice the chillies, keeping both pith and seeds
  2. Put all the ingredients into a medium pan and heat.
  3. Simmer for 15-20 mins, stirring every few mins.
  4. Turn off heat and cover.
  5. Leave to cool until the pan is luke-warm or cooler (around 1 hour).
  6. Slice the chicken into thin strips (approx 1x2x10cm).
  7. Place the chicken into the marinade and mix in so it is well covered.
  8. Cover with lid.
  9. Fridge for approx 60-90 mins.
  10. Remove each chicken piece from marinade and BBQ or grill for approx 10 mins, turning frequently.
