As I don't eat cheese, I tend to home-make lots of things and look for non-cheese versions, which is harder these days as I don't wnt vegan or processed alternatives, just to avoid the lactose! The French have a version of pesto called pistou that inspired me to come up with a cheese free pesto recipe.
Preparation
- Blitz the pine nuts in a blender until fine
- If using cheese add this next and blitz again
- If using any other optional ingredients add these and blitz again
- Then add the basil and blitz again
- Drizzle the olive oil in whilst still blitzing
- Finally add the lemon and salt
- This will last for up to 2 weeks in the fridge, oder can be frozen to store for longer.
Notes
- For interesting varieties try adding 3 sun dried tomatoes, a toasted jalapeño, a pinch of nutritional yeast, or a dried red chilli
