I developed this recipe several years ago whilst trying to produce a rich cake that was a bit healthier than most
Preparation
- Juice and zest the oranges
- Sift all the dry ingredients into a bowl and gently stir together
- Use a spoon to push 3 even spaced depressions in the dry mix
- Add the oil to 1 depression, the orange juice into another and the essences & triple sec into the third
- Add the eggs and orange zest on top of the mix
- Blend the mix in a food processor on low-medium speed
- Pour the mix into a medium cake tin (pre-greased)
- Sprinkle the chocolate drops on top and stir into the top half of the cake with a spoon (they’ll sink while cooking)
- Cook for 30-40 mins at
200°C - To check the cake is cooked push a knife into the top and withdraw – the knife should come out clean

- ½ tsp salt
- 5 tbsp canola oil
- 1 tsp vanilla essence
- 1 tsp orange essence
- 2 large oranges
- 25ml triple sec
- 2 Eggs
- 100g chocolate chips
