Preparation
- Peel and chop the potatoes and carrots into edible size pieces
- Cut the bacon into 1-2cm squares
- Cut the chicken into edible size pieces
- Cut the onion and celery finely so they become part of the sauce rather than big chunks
- In a frying pan fry the bacon in the oil until it is browned, then set aside
- Brown the chicken in the oil left by the bacon, then set aside
- Fry the onion for 7-8 mins until softened then add the celery and carrot and cook for a further 5-6 mins
- Readd the chicken and onion
- Stir in the sauce mix
- Add the coconut cream, stock, and potatoes and cook for approx 30 minutes - until the potatoes are cooked, but before they turn mushy
- Serve with crusty bread

- 1tbsp brown sugar
- 3tbsp dark soy sauce
- 1tsp chinese five spice
