Preparation
- Pierce the aubergine in several places and bake in an oven at
180°C for around 1 hour - Leave to cool for 15-20 mins
- Peel
- dice finely, into ½cm cubes
- Place in a large bowl with the flour and baking powder and mix together
- Add the remaining ingredients and mix well
- Heat the oil (around ½cm deep) in a large pan until fully hot
- Make golf-ball sized balls of mix in your hand and drop carefully into the hot oil
- Fry for around 1 minute and then turn over and fry for a further minute
- Remove and place onto paper towel to drain free of oil
- Cook the remaining mix
- Serve
