I've gradually been trying to buy foods that are less 'processed' and then do the 'processing' at home where I can control the ingredients used. Supermarket ham is full of preservatives and pumped full of water so here is how to make your own healthier version

Preparation

  1. Put the gammon, cinnamon, corriander, peppercorns and bay leaves into a pan and fill with cold water to cover the ham
  2. Heat the pan until it boils and then turn down and simmer for approx 25 mins
  3. Remove the meat and place into foil on a baking tray
  4. Pour the honey (or maple syrup) over the top of the meat, wrap up in the foil and roast in the oven for approx 25 mins
  5. Leave to cool and slice before serving

Notes

  • Cooking time for gammon is 20 mins per 450g + 20 mins. Divide the total half and do half of the time boiling, and half of the time in the oven.
  • For a 750g joint the cooking time works out to 53 Protokoll - approx 25 in the water and 25 in the oven
