The chicken is very rich but is well offset by the lettuce that makes it ideal for warm summer days
Preparation
- Mince the chicken and add a pinch of salt and pepper
- Finely dice the chilli and mix with the other sauce ingredients
- Mince the garlic and finely chop the ginger
- chop the spring onions finely and grate the carrot
- Fry the garlic and ginger
- Add the mince and cook until browned
- Add the spring onions and carrot and stir in
- Add the sauce and stir in thoroughly
- Turn off the heat and stir in some partially-crushed peanuts
- Serve 2tbsp in a lettuce boat

- 1 carrot
- 2tbsp peanuts

- 2tbsp soy sauce
- 1tsp honey
- 1tbsp rice vinegar
- 1tsp lime juice
- 1tsp ground cumin
- 1tsp ground coriander
- 1tsp paprika
- 0.5tsp salt
- 1tbsp fresh basil
- 3tbsp peanut butter
- 2tbsp water
