I've gradually been trying to buy foods that are less 'processed' and then do the 'processing' at home where I can control the ingredients used. Supermarket ham is full of preservatives and pumped full of water so here is how to make your own healthier version
Preparation
- Put the gammon, cinnamon, corriander, peppercorns and bay leaves into a pan and fill with cold water to cover the ham
- Heat the pan until it boils and then turn down and simmer for approx 25 mins
- Remove the meat and place into foil on a baking tray
- Pour the honey (or maple syrup) over the top of the meat, wrap up in the foil and roast in the oven for approx 25 mins
- Leave to cool and slice before serving
Notes
- Cooking time for gammon is 20 mins per 450g + 20 mins. Divide the total half and do half of the time boiling, and half of the time in the oven.
- For a 750g joint the cooking time works out to 53 Protokoll - approx 25 in the water and 25 in the oven
Ingredients
- 750g gammon
- 6 bay leaves
- 2tbsp whole black peppercorns
- 2tbsp corriander seeds
- 2 cinnamon sticks
- 3tbsp maple syrup
Equipment
- Large pan
- Oven tray
- Foil
