Preparation
- Grind the whole spices
- Mix the marinade ingredients
- Slice the pork into 2cm thick slices and cover with the marinade. LEave for 24 hours
- Place some foil in a metal baking pan
- Stack the slices on top of each other. Hold in place with kebab skewers or similar
- Wrap completely with the foil
- Cook at
170°C言語 for around 3-4 hours (until the pork reaches 85C) - Leave to cool
- Slice into ½cm thick pieces (around 5cm long typically)
- Use in other dishes or freeze in suitable quantities
