This isn't quite a traditional dish because I have omitted both egg and prawns, but the flavours are still there
Preparation
- Prepare the sauce - just stir the ingredients together
- Cook the pasta until it is just beyond al dente, then drain and set aside
- Heat the oil
- Stir fry the chicken for around 5 mins, it should be just about done (it is done at 80C)
- Add the garlic and stir for 30 seconds
- Add the curry powder and stir for around 30 seconds. The spices should gently sizzle
- Add a little more oil (unless there is still plenty)
- Turn the heat up and stir in the pasta (or noodles) and stir well for 30-40 seconds.
- Reduce the heat and continue stiring until the pasta is well coated in the oil - approx 1 more minute
- Add the sauce, stir in well, and turn off the heat. Serve immediately.
