Preparation
- Cook the split peas and whole (peeled) garlic in the cold water, white wine and salt. This will take at least 30 minutes and could take up to 1 hour. The peas should swell up and go soft but you don't want to go as far as pea-soup
- When the peas are done, strain off any excess liquid with a cheesecloth lined sieve
- Blend the peas (and garlic) in a food processor
- Add the lemon juice, white wine vinegar, ½ the red onion and then drizzle in the olive oil
- Stop blending when the mixture has the consistency of well mashed potatoes
- Place on a serving dish, drizzle with olive oil and lemon juice and garnish with thin slices from the remaining half of the onion
