Preparation
- Cut the tops off and dig the core out of the peppers and tomatoes, retaining the tomato innards
- chop the tomato innards
- Fry onion & garlic 3-5mins in half the oil
- Add the tomato flesh and
tomato purée - Add rice and 150ml of the veg stock and cook 10mins
- Turn off the heat and add salt, pepper, and herbs
- Spoon the mix inside the hollowed peppers and tomatoes, and replace the lids
- Drizzle with remaining oil and season with salt and pepper
- Pour remaining stock into the tin
- Cover with foil
- Bake for 1 hour at
140°C - Remove foil
- Bake another 15-30 mins
