Preparation
- Season the beef with salt and pepper
- Fry the beef in 3 batches in a hot pan until browned, approx 3-4 mins per batch
- Set the beef aside, then fry the shallots and carrots until browned
- Add the garlic and thyme and cook for couple of minutes
- Stir in the
tomato purée and flour and stir for 2 procès-verbal - Add the beef and juices back to the pan, and stir in
- Add the wine and stock, and then stir in the parsley, bay leaves and zest
- Cook with a lid on a low temperature for 2-3 hours
- Season before serving
