I usually make this recipe for xmas dinner. It never fails to please with everyone from grandparents to children enjoying it - never make them eat boiled cabbage again!
Preparation
- Peel the outer layers off the red cabbage
- chop it into quarters (through the base)
- Cut the hard stem part out of the bottom of each quarter
- Slice it into long thin strips
- Peel, core and chop the apple
- dice the onions
- Mix the cabbage, apple and onion in a very large pan.
- Sprinkle on the allspice and then the sugar
- Pour on the vinegar and then the cider
- If the liquid level isn’t visible below the veg use water (I used 300ml) to top up until the liquid surface becomes just visible
- Put the slice of butter on top
- Bring to boil. Once boiling, reduce heat to low, put a lid on the pan and leave to simmer for between 60 – 90 mins
- Drain with sieve and serve.
