Onion and Tomato Pasta Bake

Preparation

  1. Cut the onions into thin slices and fry in the oil on a medium-low heat to soften 15-20 mins (the longer the better)
  2. Cut the bacon into 2cm squares and add to the pan, turn up the heat to medium
  3. Stir in the garlic-ginger paste and cook for another minute
  4. Stir in the cherry tomatoes and stir for 1-2 mins to brown slightly
  5. Purée the tin of tomatoes then stir in
  6. Add the chicken stock and water, bring to a boil, and then stir in the pasta and simmer for approx 10 mins
  7. Once the pasta is cooked stir in the balsamic, dark soy, chilli pasta and dark sugar
  8. Turn off the heat and serve
