Preparation

  1. Remove any green stalks from the chillies but leave the seeds and pith in
  2. Peel the garlic
  3. Make sure the salt is nice and fine
  4. Juice the lime
  5. Whizz everything together for ages in a blender
  6. Should fill a jar similar to mine which is 725g / 750ml

Notes

  • This salt and acid mean this will last in the fridge for weeks (or months)

  • 500g red chillies (traditionally Thai but serrano or red jalapenos also work)
  • 2 tbsp white rice wine vinegar
  • 2 tbsp fresh lime juice
  • 2 cloves garlic
  • 2 tsp salt
