Credit to Glebe Kitchen from where I must admit i've prettty much lifted this recipe largely unchanged.
Preparation
- Finely chop the onion
- Slice the chorizo into thin discs around 0.5cm thick
- Heat the oil in a large pan
- Fry the chorizo discs on a medium heat until they are browned and the oil is red
- Tip into a casserole dish
- Season the chicken thighs with salt and pepper
- Fry the chicken in the oil left from the chorizo skin side down for approx 4-5 mins
- Turn over and cook the other side for 2-3 mins
- Tip the chicken into the casserole dish
- Fry the onion in the same oil until softened - around 3 mins, then tip into the casserole dish along with the remaining oil
- Add the chillies and paprika to casserole dish along with the chicken stock
- Cook at
200°C for 15 mins in the oven - After 15 mins add the red pepper and tomatoes (whole)
- Cook until the chicken pieces reach
80°C (use a meat thermometer) - approx another 30 mins
