Preparation

  1. Fry the bacon on a high heat until crisp
  2. Put the bacon aside on kitchen paper to dry
  3. Fry the shallots for around 5 minutes until browned, then set aside with the bacon
  4. Cut each chicken piece into 3-4 pieces about 2 inches across, and pat dry with kitchen paper
  5. Fry the chicken pieces in 3 batches, until browned, around 3-4 minutes per batch
  6. Set the chicken aside, and briefly fry the garlic
  7. Use the brandy to deglaze the pan
  8. Add the purée and stir briefly, then add the wine
  9. Return the chicken pieces and stir well to coat with the wine and tomato
  10. Add the remaining ingredients, except the parsley, and stir well
  11. Turn down the heat to low and simmer with a lid on for around 45 minutes
  12. When ready, stir in the parsley and serve

  • 3 cloves garlic, finely chopped
  • 3 tbsp brandy
  • 600ml red wine
  • 150ml chicken stock
  • 2 tsp tomato purée
  • Handful thyme
  • Handful rosemary sprigs
  • 2 bay leaves
  • Handful parsley
