Classic Thai curry. Also known as Phanaeng.

Preparation

  1. Heat the oil in a large pan
  2. Fry the curry paste for approx 2 mins - avoid burning it
  3. Add the cocnut milk and lime leaves
  4. Once boiling add the chicken and simmer for 10-12 mins
  5. Check the chicken is done with a meat thermometer - it needs to be 80°C
  6. Stir in the fish sauce and sugar
  7. Turn off heat
  8. Stir in the basil

Notes

  • The quantity of curry paste is approximate - if you made it yourself simply use the right proportion (1/3 of the total based on the numbers I've used)
