Malay-style fried noodles

Also known as Mee Goreng.

This isn't quite a traditional dish because I have omitted both egg and prawns, but the flavours are still there

Preparation

  1. Prepare the sauce - just stir the ingredients together
  2. Cook the pasta until it is just beyond al dente, then drain and set aside
  3. Heat the oil
  4. Stir fry the chicken for around 5 mins, it should be just about done (it is done at 80C)
  5. Add the garlic and stir for 30 seconds
  6. Add the curry powder and stir for around 30 seconds. The spices should gently sizzle
  7. Add a little more oil (unless there is still plenty)
  8. Turn the heat up and stir in the pasta (or noodles) and stir well for 30-40 seconds.
  9. Reduce the heat and continue stiring until the pasta is well coated in the oil - approx 1 more minute
  10. Add the sauce, stir in well, and turn off the heat. Serve immediately.
