As I don't eat cheese, I tend to home-make lots of things and look for non-cheese versions, which is harder these days as I don't wnt vegan or processed alternatives, just to avoid the lactose! The French have a version of pesto called pistou that inspired me to come up with a cheese free pesto recipe.

Preparation

  1. Blitz the pine nuts in a blender until fine
  2. If using cheese add this next and blitz again
  3. If using any other optional ingredients add these and blitz again
  4. Then add the basil and blitz again
  5. Drizzle the olive oil in whilst still blitzing
  6. Finally add the lemon and salt
  7. This will last for up to 2 weeks in the fridge, or can be frozen to store for longer.

Notes

  • For interesting varieties try adding 3 sun dried tomatoes, a toasted jalapeño, a pinch of nutritional yeast, or a dried red chilli

  • 2 tbsp lemon juice
