Preparation

  1. Roast the garlic with the oil until browned
  2. Blend the garlic, vinegar, onion, coriande,r oregano, bay leaves, sugar, salt, pepper, and the spices
  3. Coat the pork with the mixture and refrigerate overnight (minimum 6 hours)
  4. Cover the pork with foil and cook for 50 minutes at 240°C
  5. Heat the glaze ingredients in a pan until melted together
  6. Brush the glaze onto the pork and bake for an additional 10 minutes

  • ½tsp cinnamon
  • 1tsp sugar
  • Pinch salt
  • Pinch ground black pepper
  • 700g pork belly
  • Glaze
  • 1tbsp honey
  • 60g chocolate
  • 1 fresh chilli
