Preparation

  1. Season the beef with salt and pepper
  2. Fry the beef in 3 batches in a hot pan until browned, approx 3-4 mins per batch
  3. Set the beef aside, then fry the onions and carrots
  4. When the onions are browned, add the bay leaves and the garlic and fry for around 30 seconds
  5. Stir in the tomato purée and cinnamon and cook gently for another 2 minutes
  6. Return the beef and stir in well
  7. Add the red wine and then the chicken stock
  8. Cook gently with a lid for around 45 minutes
  9. With 15 minutes to go, cook the pasta in boiling water until al dente
  10. Drain the pasta and stir into the mix along with the parsley and stir
  11. Cook gently for final 10 minutes

  • 1tsp cinnamon
  • 4 cloves garlic
  • 450ml chicken stock
  • 300ml red wine
  • 600g penne
  • 25g fresh parsley
  • Pinch salt
  • Pinch ground black pepper
