The chicken is very rich but is well offset by the lettuce that makes it ideal for warm summer days

Preparation

  1. Mince the chicken and add a pinch of salt and pepper
  2. Finely dice the chilli and mix with the other sauce ingredients
  3. Mince the garlic and finely chop the ginger
  4. chop the spring onions finely and grate the carrot
  5. Fry the garlic and ginger
  6. Add the mince and cook until browned
  7. Add the spring onions and carrot and stir in
  8. Add the sauce and stir in thoroughly
  9. Turn off the heat and stir in some partially-crushed peanuts
  10. Serve 2tbsp in a lettuce boat

  • 400g skinless boneless chicken breasts

  • Pinch ground black pepper
  • 4 spring onions
  • 1 carrot
  • 2tbsp peanuts
  • 1 lettuce
  • Sauce
  • 1 red chilli
  • 2tbsp soy sauce
  • 1tsp honey
  • 1tbsp rice vinegar
  • 1tsp lime juice
  • 1tsp ground cumin
  • 1tsp ground coriander
  • 1tsp paprika
  • 0.5tsp salt
  • 1tbsp fresh basil
  • 3tbsp peanut butter
  • 2tbsp water
